Black Bean Curry

Ingredients
- cooked brown rice
- 2 tsp olive oil
- 1 medium onion, finely chopped
- 2 tsp garlic powder
- 1 tbsp ground coriander
- 1 tsp chili powder
- ¼ tsp cinnamon
- 2½ tsp cumin
- 2 tsp curry powder
- ½ cup tomato sauce
- 1 tsp kosher salt
- ¼ tsp pepper
- 2 cans black beans, drained and rinsed
- 1 can coconut milk
- garnish: sliced green onions and chopped fresh parsley
- add raw veggies: bell pepper, red cabbage, baby spinach, etc.
Instructions
In a large pan, add the oil and onion. Cook 5-7 minutes until translucent, stirring frequently. Add spices and stir frequently for another 3 minutes.
Stir in tomato sauce, black beans, and coconut milk. Gently simmer for 10 minutes, stirring every few minutes.
Serve over rice, with veggies and garnish.
