Roasted Okra


  • 1 lb okra
  • olive oil
  • salt and pepper to taste
  • optional other spice, like cumin, paprika, or cajun spice mix


Preheat oven to 425°F, with convection if available.

Arrange the okra slices in one layer on a foil lined cookie sheet. Drizzle or spray with olive oil and sprinkle with salt and pepper.

Bake for 10 to 15 minutes, or to preferred level of char.
