Curry Sweet Potatoes with Pomegranate Seeds
- 2 to 3 sweet potatoes (depending on size), diced
- heavy whipping cream
- curry powder
Boil sweet potatoes until soft, then drain.
Mash with a fork until the desired level of lumpiness. Switch to an electric mixer, and begin to add the other ingredients, starting small, and building them up as needed / to taste.
Serve, and sprinkle with pomegranate seeds.
