Honey Almond Lemon Roasted Cabbage

- 1 head cabbage
- 1 tbsp olive oil, plus some for coating the cabbage
- 1½ cup almonds, chopped
- juice of one lemon
- 1 tsp honey
- salt, pepper to taste
Shred cabbage, toss with olive oil. Broil on a cookie sheet for 10-15 minutes, stirring halfway through, until it has a nice amount of char.
Meanwhile, toast the chopped almonds in a pan, on the stovetop, and whisk together the olive oil, lemon juice, and honey.
Toss the cabbage with the dressing and some salt and pepper, and mix in the toasted almonds.
