Maple Bacon Roasted Brussels Sprouts

  • 1 lb brussels sprouts, ends trimmed and sliced in half lengthwise
  • 4 to 6 cloves garlic, whole
  • 1 tbsp olive oil
  • 2 tbsp maple syrup (or honey)
  • salt and pepper to taste
  • 4 to 5 slices bacon


Preheat oven to 450°F (use convection if you’ve got it).

Toss the sprouts and garlic cloves in the oil, syrup, salt, and pepper, to lightly coat them. Arrange in a single layer, face down, on a bare, professional quality (non-warpy) cookie sheet. Cut the bacon strips crosswise into little ½-inch strips, and scatter the pieces on top of the sprouts.

Bake for 15 to 25 minutes, looking for the level of char you’re most comfortable with.
