Palak Paneer

Ingredients
- 1 batch of paneer
- 300g fresh spinach
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 inch ginger, minced
- 2 tomatoes, finely chopped
- ½ serrano pepper, finely chopped
- ½ cup coconut milk
- 1 tsp ground cumin
- ½ tsp turmeric powder
- 1 tsp ground coriander
- 1 tsp garam masala
- ½ tsp red chili powder
- 2 tbsp vegetable oil
- Salt to taste
- Cooked basmati rice, for serving
- Fresh coriander for garnish
Instructions
Heat 1 tbsp of vegetable oil in a pan over medium heat. Lightly pan-fry the paneer cubes until golden on all sides. Remove and set aside.
In the same pan, add the remaining oil and cumin. Once they sizzle, add the chopped onion and sauté until golden.
Add garlic, ginger, and serrano. Cook for 2 minutes until fragrant.
Stir in the tomatoes, turmeric, coriander, and chili powder. Cook until the mixture becomes a thick paste.
Add the fresh spinach and cook until wilted. Mix in coconut milk, garam masala, and salt. Simmer for 5 minutes.
Gently fold in the paneer cubes, letting them soak for a few minutes.
Serve hot with basmati rice, garnished with fresh coriander.
