Rhubarb Berry Pie
Adapted from Simply Recipes.
Use this pie crust.
- 1½ cups sliced rhubarb (6 to 7 stalks)
- 1½ cup sliced strawberries or blackberries
- ¾ cup sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- ½ tsp vanilla
- dash of ground mace or nutmeg
Stir sugar and cornstarch together in a large bowl. Add the rhubarb, and berries. Add the lemon juice, vanilla, and mace or nutmeg. Stir gently to coat berries with the sugar. Let sit for 15 minutes, stirring once.
Heat oven to 375°F.
Scoop fruit mixture into dough-lined pie dish.
Bake with a crust protector for about 1 hour.
