Vegan Oatmeal Cookies

Ingredients

  • ¾ cup (145g) packed light brown sugar
  • 2 tbsp (25g) granulated sugar (or coconut sugar)
  • ½ cup (115g) light olive oil (or melted / cooled coconut oil)
  • 2 tbsp (30g) dairy-free milk (or water)
  • 1 tsp vanilla extract
  • ¾ cup (95g) all-purpose flour (or gluten-free 1:1)
  • tsp coriander
  • ¼ tsp cinnamon (or ground ginger)
  • ¼ tsp nutmeg
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1½ cup (180g) rolled oats

Instructions

Preheat oven to 350° F. Line a baking sheet with parchment paper.

Mix the sugar and oil in a bowl until well combined. Mix in the milk and vanilla, then mix in the flour, spices, baking soda, and salt. Add the oats and mix thoroughly until well combined.

If the dough is dry, stir in more milk and/or oil in small amounts until it becomes soft and tacky but not sticky.

Scoop the dough into balls and place on the baking sheet about 2 inches apart.

Bake for 10-12 minutes, remove even if they look underdone. Allow them to cool on the baking sheet, on top of a wire rack.
