Roasted Sausage with Fennel, Peppers, and Mushrooms
- olive oil spray
- 4-5 sausages (not jalapeño-cheddar, believe me!)
- 1-3 fennel bulbs, sliced into wedges
- 1 bell pepper, large dice
- shiitake mushrooms, stems removed, gills facing up
- salt and pepper to taste
Spray sheet pan with oil, then arrange all ingredients on pan and lightly spray again. Salt and pepper to taste. Roast on top rack at 425° for 25-30 minutes.
